Asher Approved // Toddler Pops...

The afternoons are already warming up here in SoCal and what not a better way to cool off than with a delicious cold treat! Today I'm sharing with you an easy and yummy popsicle recipe that is perfect for your toddler or any kid if that! These pops are tasty, healthy, and a breeze to whip up!
Ingredients:
blueberries (frozen or fresh.. either works!)
strawberries (chopped in small pieces)
coconut water
popsicle mold - (I found mine at Family Dollar.. can't beat $1)

Directions:
1. Place chopped strawberries and blueberries into popsicle mold. You can add as many as you would like. If you want a more fruity pop add more, if you want less fruity pop add less.
2. Fill mold with coconut water. Be sure to leave a little room at the top for expansion when freezing.
3. Store pops in freezer and let them freeze overnight.
4. Eat!
These pops should be eaten within 2 weeks or so! They are best when fresh!

I hope you all enjoy this tasty treat!
Happy Friday!

Asher Approved... Easy Apple Bites!

Asher loves food... I seriously couldn't ask for a better eater... There are very few things that he doesn't approve of. With that being said, I always try to keep the foods I give him different and interesting. Recently I whipped up this easy apple bite recipe for him and it has been a hit! He is a sucker for sweet stuff and these little bites are sweet AND healthy...
and of course he approves!

What you will need: (makes 4 servings)
2 Apples
1 tsp Cinnamon
2 tbs Butter
2 tsp Brown Sugar

Directions:
Chop apples into bite size pieces. Melt butter in saucepan on med heat. Add apples. Saute until they are semi soft. Add cinnamon and brown sugar and saute until soft. Let cool and serve!

* I store these in the fridge for a few days, they keep well for me*

I hope you guys enjoy the recipe! What are some things you make for your little one?

1 onion finely chopped
1 garlic clove
20oz. can chopped tomatoes
1Tbs. tomato paste
1Tbs. balsamic vinegar
1Tsp. sugar
1Tbs. fresh basil (chopped)
Parmesan Cheese

Directions:
cook pasta until done. heat olive oil in a sauce pan, add onion and garlic, saute until soft. Add tomato, tomato paste, vinegar, and sugar. Cook (uncovered) for 10 minutes or so. Finally add the basil.

Mix pasta and sauce together. I like to freeze the rest of mine in serving size containers. This pasta is adult and big kid friendly too so make some for the whole family!

Asher Approved: Yummy Cinnamon Eggy Bread Fingers

The past few weeks we have been slowly introducing finger foods into Asher's diet. He does so well feeding himself and is really showing interest in what Jacob and I eat. Today I'm starting a little series on the blog called "Asher Approved"... with this series I will be sharing all of Asher's favorite recipes. Recipes will range from breakfast to dinner to snacks and more! I figured this would be an easy go to for you mama's with littles! So today's first Asher Approved recipe is.....
Cinnamon Eggy Bread Fingers

Ingredients:
1 egg
1/2 teaspoon ground cinnamon
1 slice whole-grain bread
1/2 tablespoon extra virgin olive oil

Directions: Mix egg and cinnamon in bowl. Cut bread into fingers and dip into mixture. Place fingers in pan and cook until well down (be sure to cook throughly!). Serve (I like to top boos with a little extra cinnamon and cut into tiny pieces!)
Delicious!
