MINI CAULIFLOWER PIZZAS

I'm so thrilled to be sharing another amazing kid-friendly recipe that my fabulous friend Cat put together! You may have seen our Coco Chia Peach Popsicle post from the other week and if you haven't I highly recommend that you check it out! Today we are sharing an easy twist on a classic kid favorite... PIZZA! This pizza is a great way to get your little ones to eat their veggies and also makes for a great family dinner.

MINI CAULIFLOWER PIZZAS
(gluten free)

Ingredients:
(for the toppings feel free to use your toppings of choice!)
Head of cauliflower
1 egg
1/3c. Organic Mozzarella cheese
dried oregano
basil leaves
organic pizza sauce
mushrooms
First you are going to start off by making your pizza crust. You will need to use this easy recipe we found HERE.
After you get done making your cauliflower crust you will want to continue to follow the recipe however we molded them into mini pizzas instead of one large pizza. This recipe will make about 6 mini pizzas. If you are only wanting to make a few feel free to refrigerate or freeze your remaining "dough".
We baked these at 400 degree for about 20-25 minutes or until nice and crunchy.
Next, add toppings... Remember you can use any topping you would like. We chose to use pizza sauce, mushroom, basil, onions, goat cheese, mozzarella cheese, and tomatoes...
Lastly stick your pizzas back in the over and bake until cheese is melted, about 5-7 minutes.
Pull your pizzas out of the over and enjoy!

If you guys create these mini pizzas we would love to see them! Feel free to share them on your social media pages and tag them with #feedthesoul. Also if there is a recipe you would like to see please leave it in the comments below! We love hearing your suggestions!

Happy Friday!

COCO CHIA PEACH POPS

Today I'm so thrilled to tell that I've team up with my good Nutritionist friend Cat to bring you all an amazing kid friendly meal/snack series here on the blog! Cat will be sharing a variety of nourishing foods that are unique, simple to make, kid friendly and also easily made into adult friendly meals. Cat and I crossed paths a few months back and immediately bonded. She is amazing at what she does and I'm so flattered to have her working with me on this fun little series! I have never met someone so passionate about nutrition and the overall well being of the human body. These recipes Cat has up her sleeves will blow you out of the water!

Today's recipe is a Coco Chia Peach Popsicle recipe. These are nutritious, delicious, and perfect for a warm summer day. Easy to make and the whole family will approve!

COCO CHIA PEACH POPS
-GLUTEN FREE, VEGAN-

----------

Ingredients:
-Makes 4-6 popsicles depending on popsicle mold size-

1/2c. Coconut Water
3 organic peaches (chopped w/ skins, seeds removed)
1Tbs. Chia Seeds
1Tbs. Organic Honey (give or take)
1c. Organic Coconut Milk

Blend chopped peaches and coconut water in a blender or food processor until nicely blended.

Pour the blended peaches and coconut water into popsicle molds about 1/2 of the way (leaving room for other mixture) and freeze until somewhat firm. This will be the base of your popsicle.

Next you will want to pour your chia seeds into your organic coconut milk. Give them a good stir and let them sit for bit so the chia seeds can soak up the milk. Note: stir every 5 minutes or so to prevent chia seeds from clumping.

Add honey to your milk and chia seeds mixture to sweeten your pops. We added about 1Tbs., give or take, so add honey to your desired popsicle sweetness.

Pull the formed popsicle molds from freezer and carefully pour coconut milk, honey and chia seed mixture into the molds. You may have left over milk depending on the amount of popsicle molds you have.

Lastly place popsicle mold lids or popsicle sticks into the pops and carefully place into your freezer. These will freeze in about 6-8 hours depending on the temperature of your freezer.

And Enjoy! We will be bringing you more fun, nutritious recipes throughout the week! If there is anything particular you are looking for please feel free to leave it in the comments below. In the meantime check out Cat's amazing 8-week program "Feed the Soul". If you are looking for an excellent program that not only changes your eating habits, but life in general, I highly suggest you check it out!

Have fun making pops!

Happy Friday!

Banana Oat Bites...

Today I'm sharing with you fun little snack thats perfect for you and your toddler. I always like to have a little snack ready for Asher when he gets up from his nap and here lately these banana oat bites have been our go to. They are healthy, delicious, and easy to make.
What you will need:
Rolled oats - Bob's Red Mill are my favorite ones to buy.
Yogurt - Stoneyfield YoBaby is my go to for yogurt.
Banana
First you will want to cut you banana into small pieces.. Be sure not to cut these too small or they will be harder to work with. Poor about 1/2 of your rolled oats onto a plate.
Dip banana into yogurt, covering all of the banana
Next roll your yogurt covered banana in the oats
Lastly set on a plate or platter and continue to do the rest of the banana pieces.
Enjoy!

What are some of your go to snack ideas for toddlers? Next week I will be sharing a weeks worth of toddler meals! Be sure to check it out!

Asher Approved: Yummy Cinnamon Eggy Bread Fingers

The past few weeks we have been slowly introducing finger foods into Asher's diet. He does so well feeding himself and is really showing interest in what Jacob and I eat. Today I'm starting a little series on the blog called "Asher Approved"... with this series I will be sharing all of Asher's favorite recipes. Recipes will range from breakfast to dinner to snacks and more! I figured this would be an easy go to for you mama's with littles! So today's first Asher Approved recipe is.....
Cinnamon Eggy Bread Fingers

1/2 teaspoon ground cinnamon
1 slice whole-grain bread
1/2 tablespoon extra virgin olive oil

Snicker Salad...Yummy, Yummy!!!

Today I wanted to share with you guys a delicious and oh so easy little snack I've been munching on over the past few months... Snicker Salad. I ran across this little recipe a few months ago and decided to give it a try, but without the Cool Whip. It is now one of my favorite things to snack on! Not to mention I feel somewhat healthy when I eat it!

What you will need:
1 Snickers Bar (Or candy bar of your choice)
1 Granny Smith Apple
Knife
Cutting Board

Directions:
1. Grab your Snickers bar and washed apple. Note: I like to chill my candy bar and apple before cutting, makes the snack more refreshing.

2. Dice apple and Snickers bar

3. Toss in a bowl and serve!

(I recommend serving immediately to prevent apples from browning)

Pretty easy huh!

Enjoy!
